Appearance. Very pale straw with a slight, natural haze from wheat. Billowy, dense white head with poor-to-moderate retention that quickly recedes to a thin collar, typical of highly acidic wheat beers, showcasing high effervescence.
Aroma. Moderate to high sharp, lactic sourness dominates, immediately accompanied by a bright, punchy lime citrus aroma. Underneath, a light, clean, doughy and raw-bread-dough wheat malt character is perceptible. No hop aroma or prominent fermentation byproducts; yeast character is clean with subtle, complementary floral esters.
Taste. Clean, assertive lactic sourness is the initial impression, closely followed by a bright, refreshing splash of lime juice flavor. A supportive, low-intensity grainy, bready wheat maltiness prevents it from feeling thin. Hop bitterness is undetectable, and hop flavor is absent; balance is completely driven by the crisp, lime-accented acidity. Finishes very dry and clean, with a lingering, mouthwatering tartness of lime zest.
Mouthfeel. Light-bodied but not watery. Very high, prickly carbonation that enhances the effervescent, crisp acidity. Refreshing and clean, with no perceived alcohol warmth despite the slightly elevated ABV. No astringency.
