Nothing Bound Brewing Co

Hold (the) Horizon is a luminous Hazy IPA that showcases a sophisticated hop profile. The aroma is led by the distinctive Nelson Sauvin, offering elegant notes of crushed white wine grapes and gooseberry, seamlessly layered with Simcoe’s bright grapefruit and resinous pine. On the palate, the experience is intensely fruity, featuring passion fruit and zesty citrus over a soft, bready malt base. The flaked grains provide a pillowy, rounded texture that tempers the restrained bitterness. It concludes with a juicy, off-dry finish where the vinous character of Nelson Sauvin lingers alongside a gentle tropical sweetness, embodying a modern, approachable hop-forward character.

Appearance. Straw to deep gold (4–6 SRM) with a dense, opaque haze and a luminous glow. Topped by a persistent, creamy, meringue-like white head that leaves significant lacing on the glass.

Aroma. High intensity hop aroma featuring passion fruit, grapefruit, and pine from the Simcoe, complemented by the vinous, gooseberry, and white wine character of Nelson Sauvin. Clean, bready, and lightly grainy malt in the background with no caramel; neutral fermentation profile.

Taste. High fruity hop flavor mirroring the aroma with notes of melon, citrus zest, and tropical fruit. Low to medium-low perceived bitterness that is soft and well-integrated. Low grainy-sweet malt flavor supports the hops without competing. The finish is smooth and juicy, lacking any hop harshness or astringency.

Mouthfeel. Medium-full body with a soft, pillowy, and smooth texture. Moderate carbonation. Very light, well-integrated alcohol warmth. No mouth-coating heaviness or acidic twang.
