This Specialty Spice Beer presents an evocative sensory profile that bridges the gap between traditional craft ale and botanical soda. Dominant aromatics of spicy sarsaparilla and creamy vanilla lead the nose, supported by the cool, herbaceous lift of wintergreen and a touch of licorice-like anise. On the palate, the experience is intensely flavorful and dessert-forward, with the vanilla and sarsaparilla creating a smooth, velvety sweetness. Despite its ale base, hop presence is negligible, allowing the complex spice blend to remain the primary focus. The finish is long and sweet, punctuated by a soda-like effervescence that balances the rich, spiced-sugar character.
Appearance. Deep ebony to dark brown in color (SRM 35-40). Pours with a moderate, tan head that dissipates relatively quickly, similar to a carbonated soft drink, leaving minimal lacing. The body is clear and brilliant when held to the light.
Aroma. High intensity and highly aromatic. The primary bouquet is dominated by rich vanilla and earthy sarsaparilla. Secondary notes include a sharp, cooling wintergreen and a subtle, spicy depth of anise. Malt character is entirely masked by the spices, and hop aroma is absent.
Taste. The initial impression is one of pronounced sweetness and spice. Bold flavors of sarsaparilla and vanilla take center stage, followed by the complex herbal interplay of wintergreen and anise. Hop flavor is non-existent, and bitterness is extremely low, providing just enough structure to prevent cloying. The finish is long and sweet, with lingering notes of botanical spices and cream soda.
Mouthfeel. Medium-full body with a smooth, almost creamy texture. Carbonation is moderate to high, providing a sharp, soda-like sparkle on the tongue. Alcohol warmth is very low and well-hidden by the sugar and spice profile. No astringency.
