Northern Monk

This indulgent Imperial Stout captures a decadent dessert profile with a striking blend of rich cocoa and ripe berry. Aromas of milk chocolate and sweet strawberry jam lead the sensory experience, supported by underlying notes of roasted coffee and dark grain. On the palate, the beer delivers a luscious, creamy texture reminiscent of strawberry ice cream, balanced by the depth of bittersweet chocolate. Despite the high gravity and 8.4% alcohol, the profile remains smooth rather than hot. The finish is long and sweet, characterized by a harmonious interplay between fruit esters and dark specialty malts, providing a truly dead decadent experience.

Appearance. Jet black and opaque (40 SRM). Pours with a thick, creamy, deep tan head with moderate retention and visible viscosity in the form of legs on the glass.

Aroma. High intensity of sweet milk chocolate and macerated strawberry fruitiness. Secondary notes of cocoa powder and toasted malt provide a dark foundation. Very low hop character; clean fermentation with a subtle, smooth alcohol presence.

Taste. Bold initial sweetness featuring flavors of chocolate syrup and ripe strawberry. The malt character is rich and complex with notes of bittersweet chocolate and light coffee roast. Hop bitterness is low to moderate, sufficient only to balance the heavy malt backbone without becoming aggressive. The finish is lingering and sweet with a harmonious blend of fruit and roasted grain.

Mouthfeel. Full to very full-bodied and chewy with a velvety, luscious texture. Low to moderate carbonation enhances the creaminess. A gentle, smooth alcohol warmth is present but well-integrated.
