This innovative hybrid breathes tropical intensity into the traditional Kölsch framework. A foundation of Bamberger pilsner malt provides a clean, bready base, while additions of flaked oats and wheat create a silky, contemporary mouthfeel. The hop profile is transformed into a vibrant fruit bowl through a heavy dry-hop of Azacca, Vic Secret, and Citra BBC. Expect a sensory explosion of ripe mango, papaya, and bright tangerine that leaps from the glass. Despite the New England-inspired haze and lush fruit character, the beer maintains the refreshing, crisp finish and high drinkability synonymous with the classic Cologne style.
Appearance. Light gold with a persistent, creamy white head. Unlike a traditional brilliant Kölsch, this version exhibits a significant hazy opacity due to the heavy dry-hopping and use of high-protein adjuncts like wheat and oats.
Aroma. High intensity aromatics dominated by tropical fruit. Pronounced notes of mango, tangerine, and papaya are at the forefront. Beneath the hops, a low grainy-sweet malt presence and a hint of bready character provide a clean backdrop, free of heavy esters.
Taste. The initial impression is a wave of tropical fruit flavors, specifically citrus and stone fruit. The mid-palate reveals a soft, bready malt sweetness from the pilsner base. Bitterness is low to moderate, serving only to balance the fruit. The finish is surprisingly clean and dry, maintaining the crispness and attenuation of a lagered ale.
Mouthfeel. Medium body with a notable silkiness and creaminess on the tongue. Carbonation is moderate to high. There is a very light, well-integrated alcohol warmth that slightly exceeds traditional style expectations but remains smooth and not harsh.
