This decadent Imperial Stout, a collaboration between Northern Monk, Amundsen, and Holy Goat, is a sensory study in excess. Deep, midnight-black and viscous, it opens with an intense bouquet of rich dark chocolate and aromatic vanilla. The addition of muscovado sugar provides a deep, molasses-like complexity, while salted caramel weaves through the profile to offer a savory-sweet counterpoint to the roasted malt backbone. It is a heavy, velvet-textured experience where the high alcohol is seamlessly integrated into a tapestry of dessert-forward flavors. Each sip delivers a lingering, sinful finish of cocoa and burnt sugar, epitomizing its namesake, Gluttony.
Appearance. Opaque and jet black in color (SRM 40+). It features a thick, dense, dark tan to espresso-colored head with moderate retention. Due to the high viscosity and sugar content, visible legs are apparent on the glass.
Aroma. High intensity with a dominant profile of bittersweet chocolate and espresso. Significant additions of muscovado sugar provide earthy molasses and toffee notes, while vanilla offers a rich, creamy top note. Subtle dark fruit esters of prune and raisin are buried beneath the decadent adjunct character.
Taste. The initial impression is intensely rich and sweet. Flavors of dark cocoa and roasted coffee are layered with the distinct savory-sweetness of salted caramel. The muscovado sugar contributes a deep, burnt-sugar complexity. Bitterness is moderate-high but well-disguised by the massive malt body and residual sugars. The finish is long and lingering, dominated by chocolate and smooth alcohol warmth.
Mouthfeel. Full to very full-bodied with a thick, chewy, and viscous texture. Carbonation is low to moderate, enhancing the velvety creaminess. A smooth, noticeable alcohol warmth is present, reflecting the strength without being harsh or solventy.
