This vibrant collaboration between Leeds neighbors Northern Monk and North Brewing Co. presents a contemporary, fruit-forward interpretation of a Gose. Boasting a striking pink hue, the profile is dominated by the fleshy, exotic sweetness of Prickly Pear and the pungent, tropical aromatics of White Guava. A sharp, tangy addition of Raspberry provides a bright acidic counterpoint, while the inclusion of milk sugar adds a smoothing, creamy texture that tames the lactic tartness. The traditional saline edge remains present, enhancing the fruit flavors and ensuring a mouthwatering finish that remains exceptionally refreshing despite the lush fruit additions.
Appearance. Deep pink to magenta with a moderate, pink-tinted white head that shows fair retention; the appearance is hazy to opaque due to the high fruit content and wheat base.
Aroma. High intensity of tropical fruit; prominent guava and fresh raspberry notes lead, followed by a unique cactus-like sweetness from the prickly pear. A clean, sharp lactic acidity is present, alongside a faint doughy wheat malt character and a hint of mineral-rich sea salt.
Taste. Initial impression is a burst of tart raspberry and succulent guava, followed by the earthy sweetness of prickly pear. A moderate lactic sourness is well-balanced by the residual sweetness of milk sugar, preventing a harsh finish. Very low bitterness allows the fruit and acidity to lead. The finish is clean and refreshing with a notable, but restrained, salt character that makes the fruit flavors pop.
Mouthfeel. Medium body, feeling slightly fuller and rounder than a traditional version due to the lactose and salt; moderate-high carbonation provides a lively, effervescent sting on the tongue. No alcohol warmth.
