This American Pale Ale from Northern Monk showcases a modern, hazy evolution of the style, emphasizing depth and hop saturation. The use of Azacca CGX delivers an intense punch of ripe, tropical mango that defines the initial sensory impression. This is layered with the zesty, citrus-forward character of Riwaka and anchored by the resinous, piney undertones characteristic of Chinook. While the appearance is distinctly hazy, the palate remains balanced with a soft, bready malt foundation that supports the high hop intensity without becoming cloying. It finishes with a clean, moderate bitterness, offering a refreshing and complex sensory experience typical of the Old Flax Store's craft.
Appearance. Pale golden with a distinct, uniform haze; topped by a thick, persistent white head that leaves significant lacing as it recedes.
Aroma. High intensity hop aroma featuring dominant notes of ripe mango and tropical fruit, followed by zesty pink grapefruit and a subtle, dank pine resin. Very low bready malt support and a clean fermentation profile.
Taste. Leading with vibrant mango and stone fruit flavors, the mid-palate transitions into bright citrus peel and grounding woody pine. Bitterness is moderate and well-integrated. The finish is clean and medium-dry with lingering tropical hop oils and no harshness.
Mouthfeel. Medium body with a soft, slightly creamy texture. Moderate carbonation provides a crisp lift on the tongue. Smooth finish with no perceived alcohol warmth or astringency.
