Northern Monk FRESH FROM THE OLD FLAX STORE // 1 of 12 (2026) // PALE ALE
This contemporary American Pale Ale is a vibrant showcase of New Zealand terroir, dominated by the distinctive profile of Nelson Sauvin. An intense aromatic bouquet bursts with crushed gooseberry and white wine grapes, amplified by the addition of Phantasm and advanced hop extracts like Subzero Hop Kief. Beneath the bright citrus notes of Citra, a late dry hop of Strata introduces a layer of tropical mango and a subtle, resinous dankness. The palate is clean and refreshing, supported by a lean, bready malt base that allows the complex hop oils to shimmer before a crisp, dry finish.
Appearance. Luminous pale gold (6 SRM) with a slight modern haze. Crowned by a dense, persistent white head that leaves intricate lacing.
Aroma. High intensity aromatics lead with signature Nelson Sauvin notes of white grape, gooseberry, and elderflower. Supporting layers of Citra provide bright grapefruit zest, while Strata adds tropical passion fruit and a hint of herbal dankness. Low bready malt and clean fermentation.
Taste. Initial punch of tropical fruit and vinous Nelson Sauvin character. Mid-palate reveals grapefruit and mango flavors. Moderate hop bitterness provides a firm structure without being harsh. The finish is clean and dry with lingering notes of lime peel and resin.
Mouthfeel. Medium body with a soft, smooth texture. Moderate-high carbonation provides a refreshing prickle on the tongue. Minimal alcohol warmth and no astringency.

Pale Ale – New England / Hazy – Can 440ml – 5.6%
It’s a fresh year and a fresh approach at the Old Flax Store. Along with a larger hop dosing scheme and wide variety of formats, we have upped the ABV to 5.6% this year to help get more punch from our hops. We have also increased the complexity of the malt bill to build a thicker mouthfeel as well as a denser haze. For January we are going with Ads’ favourite New Zealand hop Nelson and have used Floe, Super and Subzero Hop Kief for some extra umph behind Nelson’s classic white grape and goosebery flavours. We have hop charged the kettle with Citra and Floe Nelson to extract a tonne more of flavour and aroma, along with a first day dry hop of Super Sauvin that’ll be boosted with Phantasm for great returns. To round things out there’s a late stage dry hop of Strata to give a touch of dankness and Grapefruit and Mango. AND THEN a final touch of Subzero Nelson Hop Kief, a cold extracted Hop Oil, to make sure the Nelson shines through. This bold and fruity Hazy Pale Ale really sets the standard for the year ahead and we can’t wait to see what comes out of the Old Flax Store in 2026.
