The sensory profile is defined by aggressive, dank hop notes that provide a pungent, herbal foundation, contrasted by a sophisticated malt backbone. Expect a seamless integration of smooth, debittered chocolate flavors that offer richness without the acridity of heavy roasting. Appearance. Opaque, deep ebony to black in color (SRM 35+). Pours with a thick, creamy tan head that demonstrates excellent persistence and leaves intricate lacing on the glass.
Aroma. High intensity hop aroma characterized by resinous pine and dank herbal notes, layered over subtle citrus zest. The malt presence is moderate, offering clean scents of dark chocolate and toasted crusts without any burnt or ashy interference. Clean fermentation profile with very low esters.
Taste. Initial impression is hop-forward with flavors of resin and grapefruit pith, immediately followed by a smooth, restrained dark chocolate and light coffee malt character. High bitterness provides a firm structure that balances the chocolatey malt notes. The finish is dry and clean with a lingering resinous and slightly roasty aftertaste that avoids harshness.
Mouthfeel. Medium body with a smooth, almost creamy texture reminiscent of a stout. Moderate carbonation provides a crisp lift, while the alcohol lends a very gentle, well-integrated warmth. Devoid of any grain-derived astringency.
