This collaboration with Redmond’s of Dennistoun presents a quintessentially juicy Hazy IPA, defined by its lush, tropical-forward profile. The hop bill is led by Idaho 7 and Strata, delivering a vibrant medley of ripe pineapple, passionfruit, and subtle berry notes. Centennial and Cascade BBC add layers of bright grapefruit and lemon zest, providing a classic citrus depth that anchors the fruit-forward character. The malt base remains softly bready and supportive, allowing the high-intensity dry hopping to shine. Expect a silky, medium-full body with a restrained bitterness that accentuates the juicy character. It finishes with a clean, fruity resonance, emphasizing Northern Monk’s expertise in modern, hop-saturated ales.
Appearance. Color is straw to light amber with a distinct opaque haze that provides a healthy shine. It features a medium, meringue-like white head with high retention and delicate lacing.
Aroma. High-intensity hop aroma featuring strong tropical notes of pineapple and mango from Idaho 7, alongside passionfruit and dank berry from Strata. Centennial and Cascade BBC contribute bright grapefruit and lemon zest. A low, bready malt character persists in the background with a neutral fermentation profile.
Taste. High fruity hop flavor follows the aroma with dominant passionfruit, pineapple, and citrus zest. Malt flavor is low and bready, providing a soft foundation. Bitterness is low to medium-low, never harsh, and masked by the body. The finish is off-dry to medium and lingers with a fruit-juice quality.
Mouthfeel. Medium-full body with a soft, smooth, and pillowy texture. Carbonation is moderate. A light, well-integrated alcohol warmth is present without any harshness or astringency.

North of the Border with Redmond’s of Dennistoun, our latest Customer Collaboration, is a super juicy 6.6% IPA, brewed to celebrate their tenth birthday.

Redmond’s were pretty set on using Cascade in a Hazy, so we’ve frontloaded the brew with a large Cascade whirlpool addition for its piney herbal nature to shine and then paired it back in the dry hop with a Strata and Idaho 7 addition for their large grapefruit character as well as the sweeter pineapple and citrus fruit notes.

The result is a dank, golden, and hazy IPA, with flavours of pine, citrus, pineapple, and mango.

Redmond’s is one of Glasgow’s best craft beer spots, with one of the best vinyl selections going. You can trawl the hundreds of vinyls they have, maybe request one while enjoying a pint of Northern Monk even further North.
