Northern Monk’s three-year project delivers a profound Imperial Stout defined by extensive Bourbon barrel aging. This jet-black liquid offers a decadent sensory journey, leading with deep aromas of vanilla, oak, and charred wood. The addition of maple syrup introduces a rich, sticky sweetness that complements the roasted malt backbone of dark chocolate and espresso. On the palate, the maple provides a divine depth, weaving through layers of caramel and dark fruit. The experience is exceptionally lush and viscous, providing a celebratory warmth that showcases both the strength of the base beer and the transformative power of the barrel.
Appearance. Jet black and fully opaque (40+ SRM). Pours with a dense, mocha-colored head that shows moderate retention. Visible viscosity creates thick legs on the glass upon swirling.
Aroma. High intensity. Dominated by rich Bourbon-barrel notes of vanilla, toasted oak, and coconut. Strong roasted malt character presents as dark chocolate and espresso. Significant maple syrup sweetness and dark fruit esters like dried figs and raisins are present. Alcohol is noticeable but smooth.
Taste. Intensely flavorful; initial maple sweetness gives way to a complex blend of bittersweet chocolate, black licorice, and roasted grain. The Bourbon barrel influence provides a spicy oak and vanilla middle. Bitterness is moderate to firm but balanced by the high residual sugar and maple. The finish is long and lingering with roast and a warming alcohol presence.
Mouthfeel. Full to very full-bodied with a chewy, velvety, and luscious texture. Carbonation is low to moderate, enhancing the creamy weight. Significant but well-integrated alcohol warmth provides a gentle glow without being harsh.
