Northern Monk A WHOLE LOT OF FAITH & JAIPUR // DOUBLE HAZY IPA
This Double IPA is a powerful collaboration that merges high-density haze with the structural integrity of a West Coast icon. Simcoe and Chinook hops lead the charge, imparting a sharp, resinous pine and a assertive bitterness that anchors the sensory experience. This foundation is layered with an intense double dry-hop of Citra and Mosaic, which erupts in a tropical symphony of mango, stone fruit, and citrus juice. At 8.4% ABV, the alcohol is well-integrated, supporting a medium-full body that remains remarkably drinkable. It is a masterful balance of modern juiciness and traditional hop character, finishing with a crisp, lingering bitterness.
Appearance. Deep gold to light orange (7-9 SRM). Opaque haze with a thick, persistent white head that leaves significant lacing on the glass.
Aroma. High intensity hop aroma dominated by tropical notes of mango, passion fruit, and citrus peel. Complementary notes of resinous pine and spicy evergreen emerge. Malt is a supportive, clean, bready background; fermentation is clean with light fruity esters.
Taste. Initial impression is a punch of tropical fruit juice. Strong hop flavors of grapefruit, pineapple, and resinous pine follow. Bitterness is firm and moderately high, but smooth rather than harsh. Low neutral malt sweetness supports the hops. The finish is medium-dry with a lingering, resinous, and fruity aftertaste.
Mouthfeel. Medium-full body with a smooth, almost creamy texture. Carbonation is moderate. A gentle, pleasant alcohol warmth is present but well-integrated. No hop-derived astringency.
