This Old Ale is a masterclass in patient brewing, defined by an intensive overnight boil that transforms the wort through deep kettle caramelization. The result is a profound malt complexity of molasses and dark treacle, further layered by secondary fermentation in oak puncheons. Utilizing a rare wild yeast strain recovered from a vintage bottle of Bass Jubilee Ale, the profile features a sophisticated leathery tang and vinous fruitiness. Firm bitterness balances the significant 10.5% strength, while the English yeast base provides a foundation of dried stone fruits, culminating in a warming, cellar-worthy profile with notable depth.
Appearance. Deep dark brown and nearly opaque. Displays a moderate to low, light tan head with average retention that fades to a thin collar.
Aroma. High intensity aroma of rich molasses, toffee, and dark fruits like plum and raisin. Distinctive notes of leather and a light vinous tang from the wild yeast are complemented by subtle oak and a pleasant, warming alcohol presence. Hop aroma is absent.
Taste. Initial impression of dense, caramelized malt sweetness featuring flavors of treacle and nuttiness. Firm hop bitterness balances the malt, leading to a complex mid-palate of dried figs and a leathery, slightly acidic tang.
