This Brett Beer presents a vibrant sensory journey, defined by an intense infusion of blackberries and the rustic complexity of spontaneous fermentation. The aroma is a sophisticated melange of jammy dark fruit and classic Brettanomyces funk, redolent of damp hay and earth, supported by subtle toasted oak from barrel aging. On the palate, the tartness of the blackberries leads into a bone-dry, highly attenuated finish. The spontaneous culture provides a multifaceted depth, balancing the fruit’s natural sweetness with a clean acidity. Its effervescent carbonation and lean body ensure a crisp, refreshing, yet profoundly complex farmhouse character.
Appearance. Deep ruby to dark purple with a persistent, fine-beaded pinkish head that leaves light lacing; the appearance is hazy to opaque due to the heavy fruit addition.
Aroma. High intensity; dominant fresh and jammy blackberry notes lead the profile. Secondary aromas of barnyard funk, wet hay, and a light leathery character emerge from the Brettanomyces, supported by subtle oak-derived vanilla and tannins from barrel fermentation.
Taste. Initial impression is sharp, tart blackberry fruit. The flavor is exceptionally dry with a rustic, earthy funk and stone fruit esters. Malt flavors are very low, providing a minimal cracker-like backdrop. Hop bitterness is low, allowing the fruit acidity and spontaneous fermentation character to define the clean, lingering finish.
Mouthfeel. Medium-light body with high carbonation that creates a lively, prickly sensation on the tongue. A mild, pleasant acidity provides a mouth-watering quality without being harsh. There is a light alcohol warmth consistent with its 6.8% ABV.
