This Double IPA showcases a vibrant, modern hop profile driven by a heavy double dry-hopping of Taiheke, Idaho 7, and Cashmere. A bold citrus forwardness leads the experience, where Taiheke provides intense layers of zesty lime and sharp grapefruit. Idaho 7 and Cashmere further brighten the sensory landscape with lemon-lime accents and a wash of succulent sweet fruits. At 8% ABV, it presents a clean, pale gold appearance with a persistent white head. The palate is defined by firm bitterness and a lean, neutral malt backbone that ensures a dry, drinkable finish, allowing the complex New Zealand and American hop aromatics to remain the undisputed focus.
Appearance. Deep gold to light orange-copper (6-9 SRM). Features a moderate-sized, persistent off-white head with good lacing. Clarity is mostly clear, though a light, characteristic dry-hop haze is present.
Aroma. High intensity hop aroma dominated by citrus zest. Taiheke provides punchy lime and grapefruit, while Idaho 7 and Cashmere contribute lemon and ripe tropical fruit notes. Malt is neutral and grainy in the background with a clean fermentation profile and a hint of smooth alcohol.
Taste. Strong hop flavors of lime, grapefruit, and lemon-peel lead into a complex mid-palate of sweet tropical fruit. Bitterness is firm and moderately high, staying clean without harshness. The malt character is low and unobtrusive, providing a soft, supportive base. Finishes medium-dry with a lingering resinous and citrusy aftertaste.
Mouthfeel. Medium body with a smooth, velvety texture. Carbonation is moderate-high. A restrained, smooth alcohol warmth is present, consistent with its 8% strength, without any hop-derived astringency.
