Borealis 2025 presents a sophisticated evolution of the Double IPA, spotlighting a complex hop trio. Talus leads with punchy pink grapefruit and dried rose petals, while Idaho 7 contributes deep layers of zesty tangerine and sticky pine resin. The inclusion of Loral adds a delicate, herbal, and floral nuance that bridges the gap between classic noble elegance and modern fruit intensity. At 8% ABV, the beer maintains a lean, clean malt profile, allowing the saturated hop oils to dominate. It finishes remarkably dry with a firm, integrated bitterness, embodying a modern strength while remaining deceptively drinkable and aromatically intense.

Appearance. Deep gold to light copper in color with brilliant clarity. Pours with a moderate-sized, persistent, off-white head that leaves significant lacing on the glass.

Aroma. High intensity hop aroma featuring prominent notes of pink grapefruit, tangerine, and resinous pine. Secondary notes of dried flowers and herbal spice are present. Malt is low and neutral, providing a clean, grainy backdrop. Fermentation is clean with a very light, smooth alcohol note.

Taste. Strong and complex hop flavors of tropical fruit, citrus zest, and floral honey. Bitterness is moderately high and firm but remains smooth and integrated. Low supportive malt character with minimal caramel influence. The finish is dry and crisp with a lingering hoppy and resinous aftertaste.

Mouthfeel. Medium-light to medium body with a smooth, slightly oily resinous texture. Carbonation is medium-high, providing a crisp bite. Restrained, smooth alcohol warmth is present, consistent with its strength.
