This Straight Sour Beer blend showcases a sophisticated marriage of spontaneous fermentation and isolated commercial yeast strains. It presents an intense sensory profile defined by high, delicate lactic acidity and a multi-layered complexity. The aromatic bouquet is dominated by concentrated notes of candied stone fruits, such as apricot and peach, layered over a subtle, cracker-like malt foundation. On the palate, the sharp sourness is balanced by a refreshing citrus character that leads into a remarkably clean, dry finish. At 6.8% ABV, it offers a refined depth that elevates the refreshing, tart qualities inherent to the wild ale tradition.
Appearance. Pale straw to light gold (2-3 SRM). Pours with a large, dense white head that exhibits poor to moderate retention due to high acidity. Clarity ranges from clear to slightly hazy.
Aroma. High intensity sharp, lactic sourness dominates. Moderately-high fruity esters suggest candied stone fruits like apricot and peach, accompanied by a bright lemon-citrus note. Malt character is low, presenting as light biscuit or cracker. No hop aroma or brettanomyces-derived funk is present.
Taste. Initial impression is a clean, assertive lactic sourness. Minimal grainy and bready malt flavors provide brief support before being overtaken by vibrant flavors of tart apple and candied stone fruit. Hop bitterness is undetectable. The balance is heavily slanted toward acidity, finishing very dry and clean with a lingering, refreshing citrus aftertaste.
Mouthfeel. Light body with high, effervescent carbonation. There is a light, well-integrated alcohol warmth consistent with its strength. Features a crisp, tongue-tingling acidity with no significant astringency or creaminess.
