Nuit Blanche is an elegant Witbier that reimagines the Belgian wheat tradition with delicate additions of honey and chamomile flowers. The sensory experience is defined by a soft, bready wheat base that carries ethereal floral notes and a subtle, nectar-like sweetness. It presents a gentle, perfumed bouquet where the chamomile provides a soothing herbal lift, complementing the characteristic citrus zest expected of the style. Appearance. Pale straw (2–3 SRM) with a profound, milky haze from the high wheat content. It is topped by a dense, white, moussy head that exhibits excellent persistence and fine lacing.
Aroma. Moderate intensity featuring bready and grainy malt aromatics, underscored by a distinct floral chamomile character and a hint of wildflower honey. Subtle zesty orange and light peppery spice notes from the yeast fermentation mingle with the herbal floralcy.
Taste. The palate opens with a pleasant bready malt and grainy wheat flavor, accented by a soft, honey-like sweetness. Chamomile flowers impart a delicate herbal and tea-like quality that replaces traditional coriander spicing.
