This luxurious Imperial Stout offers a profound sensory experience shaped by eighteen months of maturation in Pedro Ximénez barrels. The influence of the fortified wine is immediate, weaving concentrated notes of sun-dried raisins and vinous sweetness into a dense malt tapestry. Aromas of cacao and light caramel transition into a palate reminiscent of a liquid crème brûlée, balanced by a sharp coffee reduction and dark-roasted grain. The extended aging rounds out the 11% ABV into a smooth, generous warmth. Complex and delicate, the beer finishes with a lingering, sweet sophistication that highlights the harmony between roasted bitterness and the rich, sugary legacy of the Spanish oak.

Appearance. Jet black and completely opaque (40+ SRM). It pours with a thick, creamy, deep tan head that shows moderate retention, leaving dense lacing and visible legs on the glass as a testament to its high viscosity.

Aroma. High intensity and deeply complex. Dominant scents of raisins, figs, and dates from the Pedro Ximénez barrels merge with rich dark chocolate, espresso, and a burnt sugar character akin to crème brûlée. Subtle notes of vanilla and earthy hops are present alongside a well-integrated, port-like alcohol warmth.

Taste. The initial impression is sweet and opulent, featuring flavors of cacao, light caramel, and a distinctive coffee reduction bitterness. The mid-palate is dominated by the Pedro Ximénez influence, providing layers of dried fruit and uva pasa. Bitterness is firm but serves primarily to balance the heavy residual sweetness. The finish is long and warming, evolving into a sweet, velvety aftertaste of dark fruit and toasted malt.

Mouthfeel. Full-bodied, chewy, and exceptionally luscious with a velvety texture. Carbonation is low to moderate, enhancing the beer's creamy weight. A significant, smooth alcohol warmth is felt throughout, consistent with its high gravity but remaining well-integrated and never harsh.
