This Wild Specialty Beer presents a vibrant interplay between stone fruit and dark berries. The aroma is dominated by the floral sweetness of ripe Peach and the sharp, earthy tartness of Blackcurrant, layered over a delicate, lactic tang. On the palate, the stone fruit provides a fleshy mid-palate depth, while the blackcurrant drives a crisp, acidic edge that cleanses the tongue. A subtle, rustic funk from the wild fermentation adds complexity without overshadowing the fruit. It finishes remarkably dry and effervescent, making for a refreshing, fruit-forward experience that balances natural acidity with a nuanced, wild character.

Appearance. Deep pink to light purple hue with a hazy, jewel-toned appearance (SRM 12-18). The head is light pink, fairly thin, and dissipates quickly with minimal lacing.

Aroma. High intensity aromatics of fresh-sliced Peach and the signature musk of Blackcurrant. A clean, sharp lactic sourness is present, accompanied by faint earthy, leather notes from the wild fermentation. No hop aroma.

Taste. Initial sharp tartness follows through with prominent flavors of sun-ripened Peach and tart, tannic Blackcurrant. The wild fermentation lends a dry, slightly spicy character. Bitterness is non-existent, allowing the acidity to provide the balance. The finish is short, clean, and very dry.

Mouthfeel. Medium-light body with a prickly, high carbonation. A very slight astringency from the blackcurrant skins adds structure, while the overall impression is crisp and refreshing without alcohol warmth.
