This Wild Specialty Beer presents a sophisticated, dessert-forward profile that artfully balances sharp acidity with confectionery richness. The sensory experience is dominated by the lush, floral aroma of ripe pear, which is immediately deepened by the complex, spiced character of tonka beans, offering notes of almond, vanilla, and cinnamon. Vanilla bean additions provide a smooth, aromatic bridge, tempering the bright lactic tartness of the fermentation. On the palate, the fruit takes a succulent, poached quality, supported by a velvety mouthfeel that mimics a pastry crust. The finish is crisp yet lingering, leaving a delightful impression of spiced fruit and creamy sweetness.
Appearance. SRM 3-5; pale straw to golden yellow with a distinct, opaque haze. Features a moderate, frothy off-white head with surprisingly decent retention for a sour, leaving faint lacing on the glass.
Aroma. High intensity; dominant fresh pear esters are layered with the nutty, woodsy perfume of tonka and rich vanilla. A clean, sharp lactic acidity provides a bright backdrop, free from funk or acetic notes.
Taste. Initial burst of tart, juicy pear followed by a wave of creamy vanilla sweetness. The tonka adds depth with flavors of marzipan and spice. Very low bitterness with no hop flavor. The balance is decidedly toward the fruit and adjuncts, ending in an off-dry, dessert-like finish.
Mouthfeel. Medium-full body with a notable creaminess and smooth texture. Moderate carbonation provides enough lift to prevent the sweetness from being cloying. No astringency or significant alcohol warmth.
