This Farmhouse Ale presents a rustic and effervescent character typical of a classic Saison. The aroma is a vibrant interplay between the spicy, earthy notes of Saaz hops and the modern, piney, citrusy edges of Simcoe. Fermentation-driven esters of pome fruit and cracked black pepper phenolics dominate the nose, supported by a light, grainy malt backbone. On the palate, the hop bitterness is firm but balanced, transitioning into a bone-dry, refreshing finish. The high attenuation ensures a lean profile where the herbal spice of Saaz and the bright tropical nuances of Simcoe shine against a crisp, effervescent mouthfeel.
Appearance. Pale gold (approx. 6 SRM) with a slight, characteristic haze. Features a dense, rocky, long-lasting ivory head with excellent Belgian lacing and high effervescence.
Aroma. Moderate to high intensity with a complex blend of spicy black pepper phenolics and fruity esters of orange zest and pear. Hop character is distinct, melding the earthy, floral spice of Saaz with the resinous, citrusy, and tropical notes of Simcoe over a low grainy malt base.
Taste. Initial impression is crisp and highly attenuated. Low malt flavor provides a soft, grainy palate. Hop flavors are medium-high, showcasing herbal spice and grapefruit resin. Bitterness is moderate but perceived as firm due to the dry finish. Aftertaste is spicy and citrusy with no residual sweetness.
Mouthfeel. Medium-light body with very high, prickly carbonation. Provides an effervescent sensation on the tongue. Alcohol warmth is very low and well-integrated. Refreshingly crisp with no astringency.
