This spontaneously fermented Fruit Lambic showcases a sophisticated maturation, spending three years in wood. The use of Norwegian barley, wheat, and oats provides a sturdy, structural foundation for the intense contribution of Frederiksdal sweet cherries. On the palate, the cherries offer a deep, vinous character, blending seamlessly with the barnyard funk and leathery notes of wild fermentation. At 11.5% ABV, this is a potent expression of the style, delivering significant alcohol warmth alongside a sharp, lactic acidity. The three-year aging process integrates the complex fruit tannins and esters, resulting in a refined, puckering, and deeply contemplative wild ale with significant depth.

Appearance. Deep ruby to garnet with purple highlights; clear with a slight haze from long wood aging. Pours with a thin, pinkish-tan head that recedes to a fine rim; light lacing on the glass.

Aroma. High intensity of fermented cherry and almond-like pit notes, layered over deep funk including wet hay, horse blanket, and leather. Moderate lactic sourness and a noticeable, clean ethanol presence complement a hint of oak vanillin.

Taste. Initial impression is sharply tart with intense fermented cherry and dark fruit skin. Complex wild character follows with barnyard and earthy notes. The Norwegian barley and oats provide a subtle graininess that supports the high acidity. Finishes bone-dry with lingering fruit tannins and a significant, smooth alcohol warmth.

Mouthfeel. Medium-full body, notably richer than standard examples due to the oats and high alcohol content; moderate carbonation. Significant warming sensation; low astringency from cherry skins.
