Griffure is a vibrant American IPA that highlights a pungent hop interplay between two iconic varieties. The aromatic profile is defined by the resinous pine and grapefruit zest of Simcoe, beautifully layered with the ripe mango and blueberry notes characteristic of Mosaic hops. On the palate, a lean, grainy malt base allows these bold hop flavors to dominate, leading into a firm, clean bitterness. Despite its approachable strength, it maintains the assertive character of the style, finishing crisp and dry with a lingering citrus and tropical fruit aftertaste that invites another sip.
Appearance. Medium gold to light copper (6–9 SRM) with a persistent, medium-sized white head and good lacing. Generally clear, though a very slight haze is acceptable.
Aroma. High hop intensity featuring prominent resinous pine, grapefruit, and earthy spice from the Simcoe, complemented by Mosaic’s tropical mango, stone fruit, and a hint of berry. Low, clean, grainy malt supports the hop presentation with a neutral fermentation profile.
Taste. Hop-forward with intense flavors of citrus peel, pine, and tropical fruit. A low, grainy malt presence provides a clean backdrop without caramel interference. Bitterness is medium-high and sharp but not harsh. The finish is dry to medium-dry, leaving a long, hoppy aftertaste of citrus and pine.
Mouthfeel. Medium-light body with a smooth, non-astringent texture. Carbonation is medium-high, providing a crisp bite. No detectable alcohol warmth, consistent with its sessionable strength.
