This Wild Specialty Beer celebrates summer with an expressive display of luscious white peach and a bright, zesty acidity. The sensory profile is defined by the vibrant stone fruit, offering an aroma of sun-ripened peaches intertwined with a clean, refreshingly sour twist from the wild fermentation. On the palate, the peach character is both fleshy and tart, balanced by a sharp citrus-like zest that keeps the profile crisp and invigorating. With a light body and high carbonation, it finishes bone-dry and effervescent, perfectly showcasing the harmony between juicy fruit esters and a playful, acidic fermentation character.
Appearance. Pale gold with a soft peach-orange hue; moderate haze from fruit additions. Minimal white head with low retention and sparse lacing, characteristic of high-acidity wild ales.
Aroma. High intensity aromatics of fresh white peach and apricot. A distinct lactic tartness provides a zesty, lemon-like backdrop, accompanied by a subtle earthy, wild funk. Malt character is low, appearing as a faint crackery note.
Taste. Initial impression is a sharp, refreshing sourness followed by a dominant, natural peach flavor. The sweetness of the fruit is fermented out, leaving fleshy esters and a zesty acidity.
