Zipper is a vibrant Fruit Beer that bridges the gap between a traditional lemon Radler and a crisp, modern Cold IPA. This collaboration showcases a zesty lemon profile interwoven with a complex hop bill featuring Cashmere and Eclipse. Expect an aromatic burst of fresh lemon peel and mandarin, supported by the subtle melon and lime notes of the Cashmere hops. The palate is defined by its zippy citrus acidity and a clean, lean malt backbone, while the Eclipse hops contribute a contemporary citrus-forward finish. It is a highly refreshing, summery ale that prioritizes drinkability without sacrificing hop intensity or aromatic depth.
Appearance. Pale straw to light gold (3–5 SRM). Pours with a bright, white, frothy head exhibiting moderate retention and light lacing. Generally clear, though it may possess a very slight, natural haze from the lemon integration.
Aroma. High intensity aromatics lead with fresh lemon zest and candied lemon peel. The hop character is equally prominent, featuring distinct notes of mandarin orange and sweet citrus from the Eclipse hops, alongside soft melon and a hint of herbal lime from the Cashmere hops. Malt presence is very low, offering a clean, crackery hint of pilsner malt. Clean fermentation profile with no diacetyl.
Taste. Initial impression is dominated by zesty lemon and citrus pith, providing a refreshing tartness. The flavor profile evolves into the tropical and stone fruit nuances of Cashmere, balanced by the bright, zippy mandarin of the Eclipse hops. Bitterness is moderate but crisp, providing more structure than a typical Radler. The finish is remarkably dry and clean, with a lingering citrus zest and a faint, piney hop resin aftertaste.
Mouthfeel. Medium-light body with a crisp, snappy texture. Carbonation is moderately high, enhancing the zippy and refreshing quality of the fruit. Alcohol warmth is negligible. Smooth and effervescent without any harsh astringency.
