Weiss One is a distinctive take on an American Lager, emphasizing the rustic textures of 100% Scottish wheat. Utilizing a blend of malted wheat from Mungoswells and unmalted landrace wheat varieties from Scotland The Bread, the sensory profile is defined by a gentle, grainy sweetness and a soft, bready depth. Clean lager fermentation ensures the focus remains on the cereal character, complemented by a subtle floral hop presence. Effervescent and refreshing, it balances the delicate, creamy nuances of the wheat with a crisp, dry finish, offering a more artisanal, grain-forward experience than typical adjunct-driven lagers.
Appearance. Pale straw to yellow (3 SRM). Large, white, frothy head with moderate retention. Brilliant clarity with a slight shimmering quality typical of wheat proteins.
Aroma. Low to moderate intensity. Primary notes of fresh white bread and raw grain from the Mungoswells wheat. Very low floral hop aroma. Exceptionally clean fermentation profile with no perceived esters or phenols.
Taste. Initial impression is crisp and cereal-forward. Delicate flavors of crackers and cracked grain lead the palate. Hop flavor is low, contributing a faint herbal quality. Low bitterness provides just enough balance against the grainy sweetness. Finishes clean, dry, and highly refreshing with a short, tidy aftertaste.
Mouthfeel. Medium-light body, providing a slightly more substantial feel than typical rice-adjunct lagers. High carbonation with a noticeable carbonic bite. Very smooth texture; no alcohol warmth or astringency.
