The palate is bone-dry and lean, highlighting a complex interplay between crackery Dutch grains and a developing funk characterized by wet hay and earthy leather. This wild ale displays a delicate balance between bright stone fruit esters and a crisp, mineral finish, reflecting Nevel's commitment to nature-inclusive brewing and the vibrant, unpredictable character of their unique house microflora.
Appearance. Deep gold (6 SRM) with a slight, natural haze. Pours with a large, frothy white head that shows moderate retention and leaves delicate lacing.
Aroma. High intensity of fruity esters, specifically apricot and bruised pear, mingling with a rustic funk of damp straw, leather, and a hint of white pepper. Low grainy malt presence.
