Rust Batch No. 7 presents a masterclass in rustic elegance, blending a vibrant wild fermentation profile with the seasoned depth of barrel aging. This wild blond ale offers an intricate bouquet where bright citrus zest and underripe stone fruits are softened by a delicate, earthy funk reminiscent of dry hay and dusty cellar stone. The influence of the wood provides a structured, vanillin-tinged backbone that complements the beer’s lean, high-attenuation character. Brisk and exceptionally dry, it balances a whisper of mineral tang with a lingering, woody finish, perfectly embodying the sophisticated, farmhouse-driven terroir that defines the Nevel house style.
Appearance. Deep gold to light amber (SRM 5-7); hazy with a fine-beaded, white head that shows moderate retention and delicate lacing.
Aroma. High intensity featuring prominent Brettanomyces esters of apricot, lemon peel, and pear. A secondary layer of barnyard funk, wet hay, and toasted oak provides complexity over a very light, cracker-like malt base.
Taste. Initial impression is bone-dry and effervescent. Flavors of tart yellow plum and grapefruit zest lead into a rustic mid-palate of earthy funk and old wood.
