This wild-fermented Perry presents a rustic yet refined profile, defined by the delicate aromatic sweetness of Doyenné du Comice pears transformed by a sharp, lactic acidity. The aroma is a vibrant blend of floral pear skins and the distinct, zesty perfume of lemon verbena, underscored by a whisper of earthy oak from five months in the barrel. On the palate, the lack of sulfites allows a complex, funk-forward character to emerge, balancing the natural pear fruitiness with a bracing, citrus-driven tartness. It finishes bone-dry and exceptionally crisp, making it an evocative expression of wild fermentation and botanical integration.
Appearance. Pale straw to light gold. Brilliant clarity with high effervescence; a thin white rim of bubbles forms briefly but does not persist as a head.
Aroma. High intensity with a primary focus on fresh pear and delicate floral esters. Strong herbal and citrus-zest notes from the lemon verbena. A noticeable wild, funky complexity reminiscent of damp hay and mild leather is complemented by a faint vanilla and tannic wood note from oak aging.
Taste. Sharp, lactic acidity leads the palate, followed quickly by the flavor of ripe pears and lemon verbena. The natural fruit sugars are fully fermented, resulting in a bone-dry impression. Five months of barrel aging adds a structural woodiness and subtle tannins. The finish is long, clean, and refreshing with a lingering citrus tang.
Mouthfeel. Medium-light body with high, sparkling carbonation that accentuates the tartness. A slight tannic astringency from pear skins and oak provides structure. Low alcohol warmth with a very crisp, thin texture.
