Kust is a rustic and complex wild Saison that showcases the signature house character of Nevel. Brewed with emmer, an ancient grain, it offers a grainy, nutty foundation that supports a vibrant botanical profile. The addition of meadowsweet and woodruff introduces a delicate layer of almond, honey, and sweet hay, which harmonizes with the bright, tart fruitiness of raspberry and blackberry. Fermented with wild yeast, this Brett Beer exhibits a classic dry finish and an evolving funk characterized by wet hay and earthy notes. The result is a highly effervescent, multifaceted ale where herbal nuances and red berries dance over a crisp, attenuated backbone.
Appearance.Pours a hazy, pale amber with distinct pinkish-orange hues from the berries. It features a tall, frothy white head with excellent retention and fine lacing.
Aroma.High intensity with a complex blend of jammy raspberry and tart blackberry. Herbal notes of sweet woodruff and floral meadowsweet provide a honeyed, vanilla-like secondary layer. The wild fermentation contributes a moderate funk of wet hay, leather, and a dusty earthiness.
