Nevel Wild Ales Blos is an elegant, barrel-aged wild rosé beer that beautifully harmonizes rustic fermentation with delicate botanicals. Aged for six months on oak, it reveals a complex tapestry of foraged elderberry and locally grown lemon verbena, supported by subtle, earthy undertones of myrica gale, mugwort, and yarrow. A vibrant Brettanomyces character brings notes of dusty hay and soft leather, seamlessly blending with bright, tart berry fruitiness and herbal, citrusy freshness. Extremely dry and highly refreshing, this single-barrel creation presents a sophisticated interplay of tannic oak, wild yeast funk, and a clean, botanically driven finish.
Appearance. Presents a striking pale copper-rose color with soft orange highlights (SRM 10-13). It displays a light, delicate haze and is crowned by a frothy, off-white head with a faint pinkish hue that shows moderate retention and leaves fine lacing.
Aroma. High intensity and wonderfully complex. A rustic rustic Brettanomyces character dominates with notes of wet hay, leather, and dusty cellar, beautifully integrated with bright, lemon-scented verbena and deep, earthy berry notes from the elderberry. Woody oak undertones and a subtle, herbal, tea-like fragrance from the gale, yarrow, and mugwort complete the bouquet over a minimal pale malt background.
Taste. Begins with a sharp, refreshing, and tart initial impression. Very low pale malt flavor is quickly overtaken by a vibrant wave of citrusy lemon verbena and dark, slightly puckery elderberry fruitiness. Earthy Brettanomyces funk brings complexity, while hop bitterness is low, replaced instead by a light, woody, and herbal bitterness from the unique botanical blend. The balance is highly acidic and dry, finishing exceptionally clean with lingering notes of wild berries, oak tannins, and wild yeast.
Mouthfeel. Medium-light body with a dry, highly attenuated character. Carbonation is moderate-high, creating a lively, spritzy effervescence on the tongue. Alcohol warmth is very low and well-integrated, accompanied by a light, pleasant tannic astringency from the elderberry and oak that adds a vinous structure.
