Brewed with a complex blend of 17 different herbs and finished with fresh bog myrtle from Ketelbroek, it offers a rustic, multilayered sensory experience. The aroma is dominated by resinous sweet gale and earthy botanicals, layered over a lean, dry malt profile. On the palate, the bog myrtle provides a distinctive herbal bitterness that complements the subtle funky esters characteristic of Nevel’s mixed-culture fermentation. Appearance. Deep gold to light amber (8-12 SRM). Pours with a moderate, off-white head that shows fair persistence and light lacing. The beer exhibits a slight haze, typical of an unfiltered ale brewed with extensive botanical additions.
Aroma. High intensity and profoundly complex. Immediate notes of resinous bog myrtle, eucalyptus, and dried meadow herbs. Subsurface layers reveal peppery spice, floral chamomile, and a hint of earthy damp hay. Low grainy malt sweetness and moderate fruity esters like lemon zest and pear are present, supported by a faint, wild yeast funk.
Taste. Initial impression is bone-dry and intensely botanical. A rich medley of herbs provides a tea-like complexity, ranging from minty freshness to woody spice. The bog myrtle adds a unique, lingering herbal bitterness that replaces traditional hop bite. Malt flavor is minimal, allowing the spicy and herbal phenols to shine through a clean, very dry, and slightly phenolic finish.
Mouthfeel. Medium-light body with high carbonation that provides a prickly, refreshing effervescence. There is no significant alcohol warmth. A very slight herbal astringency is present, which contributes to the overall dry and crisp mouthfeel.
