Inspired by Norwegian raw ales, this refined wild ale offers a complex sensory bridge between rustic tradition and modern barrel aging. Crafted from the second runnings of grain and left unboiled, it showcases a unique, doughy malt profile that has been transformed by twenty-nine months in wood. The Nevel house culture imparts deep layers of barnyard funk and leathery complexity, which are brilliantly lifted by a late infusion of Scandinavian herbs. Expect an exceptionally dry, botanical-forward experience where the lack of boiling preserves a delicate, cereal-like protein structure, balanced by a sharp, wild fermentation character and lingering herbal earthiness.
Appearance. Pale straw to light gold (3-5 SRM) with a persistent, cloudy haze characteristic of unboiled raw ales. Pours with a moderate white head that shows fair retention and leaves light, fine lacing.
Aroma. High intensity and deeply funky; pronounced notes of wet hay, leather, and barnyard earthiness from the extended barrel aging. The Scandinavian herb infusion contributes a botanical, evergreen, and slightly peppery top note, supported by a rustic, doughy, and cereal-like raw grain scent.
Taste. The initial impression is bone-dry and crisp. Funky Brettanomyces flavors of aged wood and earthy spice dominate, followed by a complex herbal layer reminiscent of wild botanicals. Bitterness is very low, as the wort was not boiled with hops, allowing the light acidity and herbal tannins to provide structure. The finish is remarkably clean and lingering with a botanical, rustic aftertaste.
Mouthfeel. Medium-light body with a unique, slightly creamy mouth-coating quality derived from the preserved malt proteins of the raw ale process. Carbonation is moderate to high, providing a lively prickle that accentuates the dryness. No alcohol warmth is perceived.
