A collaboration with Restaurant Foer, Prikkel is a sophisticated Brett Beer that captures the essence of Nevel’s wild fermentation ethos. Fermented with wild yeast and aged in wood, this ale showcases the delicate, hay-like sweetness and vanilla-cinnamon nuances of woodruff alongside the earthy, tea-like tannic structure of blackberry leaves. The sensory profile is defined by a rustic complexity where herbal foraging meets a crisp, dry finish. Expect a dance between the funky barnyard notes of Brettanomyces and the unique botanical additions, all underpinned by a gentle wood-aged character that provides a structured yet refreshing palate, reflecting the brewery's commitment to nature-driven brewing.
Appearance. Pours a hazy, glowing gold with a brilliant white, fine-beaded head that shows moderate retention. Effervescent carbonation is visible through the slight botanical haze, leaving light lacing.
Aroma. High intensity with a complex bouquet of fresh-cut hay and sweet woodruff, reminiscent of vanilla and marzipan. Brettanomyces provides a rustic barnyard and wet straw funk, balanced by the earthy, herbal aroma of dried blackberry leaves and a faint, woody oak tannin.
Taste. Initial impression is bone-dry and crisp. The flavor features prominent herbal notes of woodruff and a subtle, tea-like astringency from blackberry leaves. Brett-derived stone fruit and citrus esters meld with a light, non-lactic tartness. Hop bitterness is low, allowing the botanical and wild yeast character to lead into a lingering, earthy, and clean finish.
