This Brett Beer offers a vibrant sensory journey featuring the bright, tart acidity of kiwi and the deep, fleshy sweetness of plum. The addition of summer wormwood introduces a sophisticated herbal bitterness that grounds the fruit character, while the time spent in a single barrel provides a delicate tannic backbone. High attenuation leads to a bone-dry finish, where earthy barnyard notes and stone fruit esters linger elegantly. Appearance. Deep gold to soft copper with a slight, natural haze. Pours with a well-retained, fine-beaded white head that leaves delicate lacing on the glass.
Aroma. Moderate to high intensity with a complex Brett character of wet hay, earthy funk, and stone fruit. Distinctive notes of tart kiwi and sweet plum are balanced by a floral, slightly medicinal herbal scent from the summer wormwood.
Taste. Highly attenuated and dry. The initial tartness of kiwi and rich plum skin flavor is immediately followed by a moderate, clean herbal bitterness from the summer wormwood. Low malt sweetness allows the fruit and wild yeast funk—notes of leather and apricot—to dominate, finishing crisp and slightly savory.
Mouthfeel. Medium-light body with high, effervescent carbonation. Very dry and crisp on the palate with a slight tannic prickle from barrel aging and no perceptible alcohol warmth.
