This spontaneously fermented cider, crafted from local windfallen apples, leads with an earthy, farmyard funk and bruised apple character. Barrel aging adds layers of seasoned oak and a whisper of vanilla, tempering the sharp, natural acidity. The palate is defined by a vibrant malic tartness and structural tannins from the apple skins, evolving into a bone-dry, lingering finish. It captures the essence of the Dutch landscape with a raw, unadulterated profile that emphasizes terroir over sweetness, offering a sophisticated, vinous character.
Appearance. Deep gold to light amber (SRM 6-9). Low to moderate white head with quick dissipation. Slight haze typical of spontaneous fermentation and lack of filtration.
