This Brett Beer presents an intricate sensory profile defined by its unique infusion of whole honeycomb from Imkerij De Oase. Initial aromas of rustic Brettanomyces funk—reminiscent of wet hay and earthy barnyard—harmonize with the deep, resinous character of propolis and savory bee bread. Long maturation in foeders and wooden barrels imparts structured oak tannins and a subtle, matured complexity. While the honey provides a delicate floral lift, the beer remains exceptionally dry due to high attenuation. The inclusion of honeycomb wax adds a distinctive earthy depth that evolves into a lingering, spicy, and slightly resinous finish in this sophisticated wild ale.
Appearance.Deep golden to light amber (7-10 SRM) with a slight, hazy particulate shimmer from the honeycomb. Features a moderate, fine-beaded white head with fair retention and light lacing.
Aroma.High intensity with a complex bouquet of funky Brettanomyces, displaying notes of horse blanket, dried hay, and earth. Distinctive floral honey notes are layered with spicy, resinous propolis and a hint of beeswax, backed by toasted oak and vanilla from the long wood aging.
Taste.Bone-dry and highly attenuated. Subtle stone fruit esters and floral honey flavors transition quickly into a complex middle of savory bee bread and rustic funk. Hop bitterness is very low, with structure provided by light wood tannins and a soft, citrus-like acidity. The finish is clean and lingering with a persistent resinous spicy character.
Mouthfeel.Medium-light body with high, effervescent carbonation that provides a crisp snap. A very slight tannic grip from the oak and propolis adds texture, while the 7.1% ABV provides a subtle, integrated warmth without being hot.
