Nevel’s Fabel Batch No. 5 is an evocative wood-aged Brett Beer that marries the rustic funk of wild fermentation with the luscious complexity of Dutch peaches. By blending a 2022 second maceration with a fresh 2024 first maceration, this batch achieves a deep sensory profile of both bright, succulent peach and more concentrated, jammy fruit notes. Expect an earthy, barnyard Brett character that complements the subtle oak tannins and a refined dryness typical of the style. High carbonation lifts the stone fruit aromas, resulting in a crisp, multi-layered experience where the vibrant fruit harvest and patient wood aging harmoniously converge.
Appearance. Hazy golden-orange with soft amber highlights. Pours with a moderate, frothy white head that shows fair retention and leaves light lacing on the glass.
Aroma. High intensity stone fruit; fresh and dried peaches are prominent. Complex Brett character provides layers of wet hay, earthy funk, and a hint of dusty cellar. Subtle oak-derived vanilla and wood spice mingle with a faint floral yeast character.
