Nuanced Brettanomyces character contributes earthy funk and a distinct peppery spice that bridges the wood tannins and floral aromatics. Despite its extended aging, the beer maintains a bright, refreshing acidity and a bone-dry finish. This blend captures a rustic elegance where delicate elderflower harmonizes with deep, aged wild ale complexity.

Appearance. Deep golden to pale amber (4-7 SRM) with a slight haze. It supports a fine-textured, white head with moderate retention and delicate lacing.

Aroma. High intensity aromatics featuring prominent elderflower and apricot-like stone fruit. A complex fermentation profile offers peppery phenols and moderate Brett funk characterized by wet hay and leather, underpinned by a subtle oaky woodiness.

Taste. A tart, crisp entry gives way to layers of elderflower perfume and dried peach. The malt presence is low and bready, allowing the funky Brett character and peppery spice to dominate the palate.
