Nevel Bruis - Batch #1 is an expressive Brett Beer inspired by the rustic elegance of red pet-nat wines. Developed in collaboration with restaurant Morille, this wild ale showcases a vibrant sensory profile driven by a complex fermentation. The aroma is high in intensity, offering a bouquet of red berries and stone fruits mingled with the earthy funk of wet hay and aged leather characteristic of Brettanomyces. When the sediment is integrated, the beer takes on a textured, vinous depth. It is remarkably bone-dry and highly carbonated, delivering a crisp, sparkling finish that mirrors the sophisticated acidity of a natural wine.
Appearance.Deep ruby to garnet (15-24 SRM) with a hazy to opaque clarity when the depot is mixed; features a light pinkish-white head with moderate retention and delicate lacing.
Aroma.High intensity; dominant wild character featuring earthy funk, barnyard notes, and hay. Significant fruity esters of raspberry, cherry, and plum are present, with a clean fermentation profile lacking lactic sourness.
Taste.Initial impression is exceptionally dry and tart. Flavors of red currant and under-ripe stone fruit are layered over a rustic foundation of earthy, leathery funk. Malt presence is minimal, providing just enough cracker-like structure to support the high attenuation. Bitterness is low and unobtrusive, leading to a short, bone-dry, and refreshing finish.
Mouthfeel.Light-bodied and lean; very high carbonation provides a prickly, champagne-like effervescence. Features a slight tannic astringency and a crisp, clean feel with no noticeable alcohol warmth.
