This wild blonde ale, aged for 27 months in a single Fino Sherry cask, presents a sophisticated interplay of oxidative complexity and Brettanomyces funk. The extended maturation introduces distinct Fino characteristics—nutty almond, chamomile, and saline minerals—that weave through a base of soft malt. Bright stone fruit esters from the long aging process are countered by earthy notes of wet hay and aged leather. Bone-dry and elegant, it showcases a masterful balance between the vinous depth of the Sherry wood and a refined, funky maturation profile. The presence of the Sherry flor adds a unique yeast-driven layer that defines its bone-dry, mineral character.

Appearance. Deep gold to pale amber (6-8 SRM); brilliant clarity with occasional fine sediment; low, white head with poor retention and minimal lacing, typical of extended barrel aging.

Aroma. High intensity; prominent Fino Sherry notes of green almond, chamomile, and sea salt. Moderate Brett funk featuring dried hay, dusty earth, and old leather. Low esters of dried apricot and lemon peel. Very low grainy malt presence. No hop aroma.

Taste. Initial impression is bone-dry and vinous. Dominant Sherry-influenced flavors of toasted hazelnuts and saline mineral notes. Brett character is moderate, providing an earthy, rustic complexity rather than sharp acidity. Low bitterness, allowing the dry, wood-tannin finish to linger. Aftertaste is clean, nutty, and slightly tart from fruit esters.
