Nepo Brewing - Nepomucen

This Black IPA showcases a striking intersection of dark malt elegance and intense hop expression. Brewed with Simcoe and Simcoe Cryo, the sensory profile is dominated by signature notes of resinous pine, earthy wood, and sharp grapefruit zest. These punchy aromatics dance over a restrained base of debittered roasted malts, offering subtle suggestions of dark chocolate and cold-brew coffee without any acrid or burnt edges. The mouthfeel is remarkably smooth, masking the 6.6% ABV with a dry, crisp finish that emphasizes hop-derived bitterness. It is a masterclass in balance, where the shadow of the malt supports the brilliant, evergreen light of the hops.

Appearance. Deep ebony to black (38 SRM) and opaque. Features a thick, persistent tan head with excellent lacing.

Aroma. High intensity hop aroma dominated by resinous pine, damp earth, and passion fruit. Subtle background notes of toasted bread and dark cocoa from the malt. Clean fermentation with no perceptible esters.

Taste. Initial hop-forward impression of pine needles and grapefruit pith. Low malt flavors of unsweetened chocolate and toast provide support without ashiness. Medium-high bitterness is firm but smooth, leading to a dry, crisp finish with a lingering resinous aftertaste.

Mouthfeel. Medium body with a smooth, velvety texture. Moderate carbonation and a light, well-integrated alcohol warmth.
