This Specialty Mead evokes a nostalgic, liquid apple pie experience. A base of concentrated flower honey provides a lush, floral sweetness that supports bright, tart apple notes. Traditional spices of warm cinnamon and creamy vanilla weave through the profile, while the addition of raisins adds a deep, sun-dried fruit complexity. A subtle glint of apricot jam provides a sticky, stone-fruit brightness on the finish. Despite its high strength, the alcohol is well-integrated, allowing the intricate layers of fruit and spice to remain the focus, reminiscent of a freshly baked Dutch appeltaart. The result is a decadent, dessert-like sensory journey that balances acidity and sweetness.

Appearance. Deep gold to amber in color. Still, with no head or lacing. Brilliant clarity with a slight oily viscosity clinging to the glass.

Aroma. High intensity. Dominant floral honey sweetness blends with fresh, tart apple skin. Warm, woody cinnamon and sweet, creamy vanilla provide a prominent apple pie spice character. Subtle notes of dark raisins and jammy apricot esters add layers of complexity. No hop aroma or malt character.

Taste. Initial impression is an explosion of sweet flower honey and tart apple. The mid-palate reveals layers of chewy raisins and a bright, jammy apricot tang. Warm cinnamon provides a spicy counterpoint to the creamy vanilla bean flavors. Bitterness is absent.
