La Griseta is an exceptionally refreshing, session-strength Saison crafted in the traditional Grisette tradition. This pale, straw-hued ale emphasizes a rustic grain bill featuring wheat, which provides a soft, crackery foundation. The aroma is driven by expressive yeast, offering a bouquet of white pepper and bright lemon zest, complemented by subtle floral and earthy continental hop notes. On the palate, its high attenuation delivers a bone-dry finish with a snappy, moderate bitterness that lingers alongside a peppery spice. Effervescent and light-bodied, it captures the traditional miner’s ale character through a balance of fruity esters and a clean, cereal-forward malt profile.
Appearance. Pale straw to light gold (3–5 SRM). Dense, rocky white head with excellent retention and significant Belgian lacing. Unfiltered with a slight to moderate haze.
Aroma. Moderate intensity featuring a blend of spicy phenols like black pepper and fruity esters reminiscent of lemon peel and pear. A soft, grainy, wheat-like malt aroma provides a rustic backbone. Low earthy and floral hop character with no fermentation byproducts.
Taste. Initial impression is crisp and highly refreshing. Soft, grainy malt flavors suggest wheat bread and crackers. Hop bitterness is moderate but feels firm due to the very high attenuation. Yeast-derived flavors of citrus and peppery spice dominate the mid-palate. Finishes bone-dry with a clean, lingering peppery aftertaste.
Mouthfeel. Light body with very high, effervescent carbonation. No alcohol warmth due to the sessionable ABV. Crisp and refreshing without astringency.
