This vibrant Double IPA showcases a complex collaboration of Citra, Zythos, and Loral hops, delivering an intense aromatic profile of bright grapefruit, pineapple, and delicate floral highlights. The inclusion of spelt provides a soft, rustic graininess and a subtle nutty undertone that supports the aggressive hop character. A clean, firm bitterness cuts through the medium body, leading to a dry finish where citrus zest and resinous pine linger. Though the 8% ABV provides a smooth, warming presence, the beer remains remarkably drinkable, balancing its bold tropical fruit notes with a lean malt backbone and a crisp, effervescent mouthfeel.
Appearance. Deep gold to light copper color (8-10 SRM) with a slight, hazy sheen from the use of spelt and heavy dry-hopping. Features a moderate-sized, persistent, off-white head with excellent lacing.
Aroma. High intensity hop aroma featuring prominent notes of grapefruit and mango from Citra, pineapple and resinous citrus from Zythos, and a distinct floral, herbal, and lemon-pepper quality from Loral. The malt is low but supportive, displaying a soft, grainy, and slightly nutty character. Fermentation is clean and neutral with a very light, smooth alcohol note.
Taste. Strong and complex hop flavors of tropical fruit, citrus zest, and floral blossoms dominate. Moderately high to high bitterness that is firm but not harsh. The malt profile is clean and soft, providing a grainy, toasted bread crust base from the spelt. The finish is dry to medium-dry with a lingering hoppy, resinous aftertaste. A smooth, clean alcohol flavor is present but well-integrated.
Mouthfeel. Medium body with a smooth, almost creamy texture attributed to the spelt protein. Carbonation is medium-high. A light, pleasant alcohol warmth is noticeable but restrained, without any harsh hop-derived astringency.
