This massive Imperial Stout commands attention with an immersive, dessert-like intensity, born from sixteen months of maturation in Knob Creek bourbon barrels. The extended aging infuses a dense, syrupy foundation with profound layers of bittersweet chocolate and toasted oak. A robust aromatic profile of dark-roast cocoa and vanilla bean leads into a decadent palate where rich caramel and spicy bourbon warmth intertwine seamlessly. Despite its formidable strength and viscous texture, the wood tannins provide a structural balance to the residual malt sweetness. It is a slow-sipping masterpiece of depth, delivering a lingering, sophisticated finish of charred wood and dark fruit.
Appearance. Jet black and completely opaque. Pours with a thin, dark tan head that recedes to a persistent collar, leaving thick, oily legs on the glass as evidence of its high viscosity and alcohol content.
Aroma. High intensity and deeply complex. Dominant aromas of bittersweet chocolate and espresso are layered with heavy bourbon influence, featuring prominent vanilla, rich caramel, and toasted oak. Subtle background notes of dark fruit, like dried figs and raisins, emerge as it warms, alongside a clean, well-integrated alcohol presence.
Taste. Exceptionally rich and velvety. Deep flavors of dark chocolate and fudge merge with significant bourbon-derived caramel and vanilla. The sixteen-month barrel rest adds a distinct charred oak character and a spicy spirit warmth. Moderate roasted bitterness provides a necessary counterpoint to the syrupy malt sweetness. The finish is long and warming, evolving from sweet chocolate to a dry, tannic woodiness with lingering notes of dark-roasted grain.
Mouthfeel. Full-bodied and remarkably syrupy with a thick, chewy, and luscious texture. Carbonation is low, enhancing the beer's weight on the palate. A significant and smooth alcohol warmth is present, providing a comforting glow without being sharp or solventy.
