This "Neo-Kölsch" bridges traditional German technique with bold New Zealand aromatics. Brewed with local Quebec grains and fermented with German Kölsch yeast from Escarpment Laboratories, it trades classic clarity for a modern haze. Massive additions of Pacifica and Riwaka hops, including Subzero Hop Kief, drive an intense sensory profile of zesty lime and tropical fruit. While the hop character is vastly more sustained than a traditional Kölsch, it retains a light, thirst-quenching body and a clean, dry finish. It is a vibrant, citrus-forward evolution of the style that balances high drinkability with contemporary hop saturation.
Appearance. 4 SRM. Medium yellow to light gold; notably hazy and unfiltered. Features a delicate white head with moderate persistence and light lacing.
Aroma. High aromatic intensity. Leading with pungent lime, grapefruit, and tropical fruit notes from Riwaka and Pacifica. A subtle grainy-sweet malt presence sits in the background with very low, clean fermentation esters.
Taste. Bright citrus and stone fruit flavors lead the palate, followed by a light, bready malt character. Medium-low bitterness is well-integrated. The finish is soft, dry, and exceptionally clean with a lingering lime zest aftertaste.
Mouthfeel. Medium-light body; smooth and soft on the palate. High carbonation provides a crisp, refreshing snap. No alcohol warmth or astringency.
