This refreshing Saison masterfully blends traditional farmhouse character with modern hop intensity. Utilizing a classic yeast strain and lactic acid bacteria, the profile leads with a vibrant lactic tartness that perfectly offsets the tropical impact of Mosaic hops. Expect vivid sensory cues of ripe mango and bright citrus zest from the Roy Farm cultivars. The palate remains exceptionally dry and effervescent, showcasing a rustic, grainy malt backbone. Spicy yeast phenolics of black pepper provide a savory counterpoint to the acidity, while the high carbonation ensures a crisp, snappy finish that emphasizes the harmonious marriage of sour and fruity elements.

Appearance. Pale gold with a slight orange hue. Noticeable haze from dry-hopping and lactic fermentation. Pours with a dense, rocky white head that exhibits excellent retention and leaves thick Belgian lacing.

Aroma. High intensity aroma featuring a punchy hop profile of mango and grapefruit. This is layered over a base of spicy, peppery yeast esters and a clean, lemony lactic tartness. Low notes of grainy, bread-like malt emerge as it warms.

Taste. Initial sharp, clean acidity followed by a burst of Mosaic-derived mango and citrus fruit. The malt character is soft and grainy.
